Cioccolate Calda - Italian Hot Chocolate

INGREDIENTS:
1 cup whole milk, divided
1 tablespoon baking cocoa 100% unsweetened
1 tablespoon cane sugar
1/8 teaspoon salt
4 ounces semisweet 64% baking chocolate
½ teaspoon vanilla extract
1 ½ teaspoons cornstarch
Optional:1/8 teaspoon cinnamon
Optional: whipped cream
PROCESS:
Pour ¾ cup whole milk in a small saucepan over low/medium heat. Bring to a simmer stirring occasionally. In a small bowl, whisk together baking cocoa, sugar and salt. In a small bowl, whisk the rest of the milk (1/4 cup) and cornstarch until dissolved. Whisk mixture into the saucepan; bring to a simmer until thickened. Pour into the four cups, serve with spoons. Yields 4 demitasse size servings. Very thick and chocolaty, hence the need for demitasse spoons.
